La uso già da qualche giorno, per ora posso solo dire che è splendida . Non credo che nel mondo delle padelle ne esista un'altra migliore . E' vero costa tanto, ma nel tempo i costi si ammortizzano , non comprerò più padelle antiaderenti , basta teflon che dopo un po' si deteriora .
la uso su fiamma a gas , il manico rimane perfettamente freddo , se si ha l'accortezza di riscaldare la padella a fuoco alto solo con l'olio o burro per qualche minuto prima di iniziare a friggere poi ...il fritto non attacca per niente , e che comodità poter usare la mie posate in acciaio per rigirare !!!
Ho trovato una splendida offerta su Amazon e non ci ho pensato due volte , messa subito nel carrello ed acquistata !

This is a 7-ply pan and heats VERY evenly. It can be used for electric, glass top, gas, and induction stove tops. Sides heat evenly with the bottom, and this pan WILL NOT WARP under temperature, no matter how high!
Cleaning is simple, and most remains will come off easily by immediately filling with cold water when off the stove. For any remaining cleaning, Bar Keeper's Friend scrubbing powder will take the pan back to NEW condition...not only in the pan, but the bottom as well. Demeyere has really stepped up the standard, and this, and their other products are HIGHLY RECOMMENDED! Pricey, but worth every penny!
NO SEASONING required. It's really about technique and the temp of the ingredients NOT the finish.
Most people are afraid to use OIL. They think a teaspoon will cut it. NO LOL. Our grandmothers cooked eggs in all these types of metal pans before teflon. Not too hot a heat. Just when a drop of water beads up. Hot pan cold oil.
Slowly heat up your pan on the scant side of med low till you get a hot pan - check for a few drops of water to bead up.
Add a tablespoon or so of butter or cold oil then bring it up to hot again, NOT BROWN OR SMOKING..., lower your temp a little bit then add your eggs.
LET THEM COOK. Don't mess with them. The protein will release itself when it's ready. (this applies to all proteins not just eggs)
Grandmothers also used ROOM TEMPERATURE eggs. I never try and cook a cold egg on a hot skillet.

You can also use a trick of putting a piece of parchment paper on the bottom. BAM no stick LOL.
Posiblemente, la mejor sartén que se pueda comprar en acero inoxidable: bien diseñada y construida, mango muy ergonómico, distribución del calor muy homogénea y con buena retención.
Dos advertencias (que, creo, valen para toda la línea de sartenes):
* Esta línea de sartenes es muy pesada: si tienes problemas en el brazo/hombro (por ejemplo, una persona de edad avanzada) es posible que no te venga bien.
* El interior no está pulido "a espejo" por lo que tiene cierta (mínima) tendencia a sacar pequeños puntos negros de oxidación superficial si se descuida con alimentos ácidos o salinos, pero nada que no se pueda eliminar simplemente pasando un estropajo.
